- 4 yellow onions, chopped
- 4 Anaheim chiles
- 2 jalapeno, minced
- 4 tablespoons garlic, chopped
- 1 pound tomatillos, husk removed
- 1/2 cup white wine
- 1/4 cup white vinegar
- 1 cup chicken stock
- 2 tablespoons ground oregano

California Turkey Chili Ingredients:

1 ¼ cups chopped onions
- 1 cup of chopped green bell pepper
- 2 cloves of minced garlic
- 3 tablespoons of vegetable oil
- 1 can (28 ounces) of kidney beans, drained
- 1 can (28 ounces) of stewed tomatoes, undrained
- 1 cup of red wine or water
- 3 cups of cooked California-grown turkey
- 1 tablespoon of chili powder
- 1 tablespoon of chopped fresh cilantro or 1 tablespoon of dried coriander
- 1 teaspoon of crushed red pepper

4 pound ground beef chuck (preferably large grind)
- ¼ cup chili powder
- 2 tablespoons minced garlic
- 3 banana peppers, seeded and sliced
- 2 large onions, chopped
- 1 can (28 ounces) diced tomatoes with green chilies, undrained
- 1 can (14.5 ounces) beef broth
- 2 cans (4 ounces each) diced green chilies, drained
- 2 tablespoons ground cumin
- 2 tablespoons ground hot paprika
- 2 tablespoons malt or cider vinegar
- 1 tablespoon dried oregano leaves

2 pounds bulk spicy beef sausage
- 2 green bell peppers, seeded and chopped
- 2 cups chopped onion
- 1 tablespoon chopped garlic
- 2 cans (28 ounces) crushed tomatoes
- 2 cans (4 ounces each) diced green chilies, drained
- ¼ cup ground chili powder
- ¼ cup molasses
- 1 tablespoon brown mustard seeds
- 2 teaspoons red pepper flakes
- 1 bay leaf
- Add hot pepper sauce as per your desired taste

Grilled Steak Chili Ingredients:

4 tablespoons minced garlic
- ¼ cup corn oil
- 3 cups chopped onion
- 1 can (14.5 ounces) beef broth
- 3 cans (14.5 ounces each) Mexican-styled diced tomatoes with chilies, undrained
- 2 cans (14.5 ounces each) crushed tomatoes
- ¼ cup plus 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano leaves
- 1 teaspoon ground black pepper
- 4 cups of beef steak (ideally ribeye)
- ¼ cup masa harina (corn flour) or yellow cornmeal
- Minced cilantro, sliced green onions and sliced ripe olives for garnish
